My German mother has the BEST potato salad recipe. The measurements are vague...to taste.
Boil and peel potatoes. (Yukon gold are her fave)
In a small saucepan combine a cup of water, a splash (ummm, maybe 1 tablespoon or so...) of apple cider vinegar, and a teaspoon of sugar. Maybe a bit more. This solution shouldn't be so sour that you make a face, nor too sweet.....just a little tangy/tart. Set aside.
Brown a bunch of bacon and crumble. Set aside.
Slice potatoes. Add bacon, finely minced onion (maybe 1/2 onion for a large bowl of potatoes), salt and pepper to taste. Add enough vinegar liquid to make potatoes moist, but not drippy. Add a couple of heaping tablespoons of mayo. Mix. Let sit in fridge overnight for best mingling of flavor. Or eat it warm. Both are delicious.
